Climate: The ripening season was characterised by a dry Christmas period and then a wet February. However, this was followed by a prefect late ripening period with clear, warm days and cool nights.
Soils: Silty loam

Colour: Deep Ruby
Nose:
Blueberry and blackcurrant fruits with cedar and oak spice notes.

Palate: A full-bodied wine with a ripe tannin structure that supports the dark berry fruit and oak flavours.

Cellaring: Ready to be drunk now or cellar carefully for up to 5 years.

Serve: Room temperature with decanting
Suggested Foods:
Grilled meats, roasts of lamb or beef and venison casseroles.
Winemaking: The fruit was handpicked, destemmed and crushed into a small open top fermenter. Selected yeast strains, a high ferment temperature and regular hand plunging of the cap resulted in a wine of deep colour and flavour. After light pressing the wine was racked to French oak barriques where it was matured for 18 months.
