Colour: Pale straw with green hue Palate: A lighter bodied wine, with a delicate texture. The subtle citrus and floral flavours linger on the long, crisp acid finish. Cellaring: This wine can be drunk fresh or cellared up to 5 years Serve: Lightly chilledSuggested Foods: Serve simply as an aperitif or with light seafood dishes, Southeast Asian curries, or crisp green salads. |
| Winemaking: | The grapes were machine harvested in the cool evening to preserve flavour and minimise phenolics. Once settled, the clear juice was cold fermented with a selected aromatic yeast strain to preserve the fruit’s intense aromatic flavours. The ferment was stopped with a small amount of residual sugar by chilling, to balance out the acidity. |
