WINEMAKING

The fruit was handpicked and whole cluster pressed in cool morning conditions. After 12 hours of settling, the juice was racked, warmed and then a selected yeast strain was added to start fermentation. After fermentation was complete, the wine was aged on yeast lees for 2-3 months to build texture and complexity. Following filtration the wine was bottled on the 3rd August, 2021.
